Cooking method:
Pressure cook 200 g pigeon peas in 750 ml water. Soak 20g tamarind in ½ cup water for 30 minutes. Heat 50 g of ghee in a pan, fry 1 tsp. mustard seeds, curry leaves, 2 onions, chopped until golden brown. Add 250 g mixed vegetables, 4 tsp. Sambhar Masala, salt to taste and continue frying. Transfer the cooked pigeon peas to the vegetables, add the tamarind extract, cover and simmer until the vegetables soften.
